Mock Kentucky Fried Chicken

How many of you like Kentucky Fried Chicken? I know my family loves it but it is getting way too expensive to buy this at the restaurant. So one day my youngest daughter did some research online and found me a mock version of Kentucky Fried Chicken. This recipe has now become our families favorite fried chicken recipe. I love cooking from scratch so this recipe was right up my alley. So, today I decided to share this recipe with my readers. This recipe has a lot of spices but it tastes great. Warning, If anybody is allergic to peanuts do not use the peanut oil for frying, use any other oil like corn oil or olive oil.
Mock Kentucky Fried Chicken

1 whole chicken cut into pieces. (or chicken breasts cut into thin slices)
½ Quart Peanut oil (or any oil you like)
2 egg whites whipped with ½ Tablespoon milk
                1/3 Tablespoon salt
                1/8 Tablespoon Thyme
                ¼ Tablespoon Basil
                ¼ Tablespoon Oregano
                ½ Tablespoon Celery Salt
                ½ Tablespoon Black Pepper
                2 Tablespoons Paprika
                ½ Tablespoon Dried Mustard
                1 Tablespoon Garlic Salt
                ½ Tablespoon Ginger
                1 cup Flour

1.       Take your unthawed chicken and cut into small pieces. I tried the whole chicken first and liked the chicken breasts cut into thin pieces better. No bones and less time to fry the chicken.

2.       In a small bowl whip your eggs whites and milk together and set aside.

3.       In a bigger bowl mix all your spices and flour together and set aside.

4.       In a large deep skillet pour your ½ Quart of oil in. Heat your oil up. With a meat thermometer or candy thermometer heat your oil to 300 hundred degrees.

5.       When your oil is heated, take your chicken pieces and dunk them in your egg and milk mixture.

6.       Next, dunk your chicken into your spices and coat the chicken patting the flour mixture around your chicken.

7.       Place your chicken pieces into the 300 hundred degrees oil and start frying them. You can use the oil two times before you need to replace the oil.

8.       If you are using the whole chicken pieces your will have to cook them for 20 to 30 minutes. Taking your tongs flip the pieces several times until the chicken comes out golden brown. I used thin pieces of chicken breasts cut into nuggets and strips and I fried them for 10 to 20 minutes.

9.       When the chicken is done frying place on a plate with paper toweling to drain off some of the oil.

10.   If you have any leftovers just place in a 350-degree oven for 15 to 20 minutes to reheat them back up. They come out just as crispy as if you had just fried them up.

When chicken is on sale stock up and cook yourself some Kentucky Fried Chicken you can make at home for less than half the price you pay at the restaurant. My family loves this recipe thanks to my daughter. I find myself making this recipe 2 to 3 times a month with no complaints from anybody. This recipe is a little time-consuming to make but well worth the wait. I hope you enjoy my daughter's recipe for Kentucky Fried Chicken from Suzie Homemaker.

French Apple Wedges

How many people love the smell of cinnamon and apples baking in the house? I know I do. So I pulled out an old recipe that my grandmother used to make for us when I was little. This recipe has been a favorite of mine and my family for years. So while I was home and not working I decided to make this recipe and share it with my readers today. If you like apples, this recipe took me 1 hour to mix up and bake.
What you will need

1 large mixing bowl for mixing all your ingredients.
Measuring cups and spoons
1 zip lock bag
A rolling pin
1 9 inch round or square tin

French Apple Wedges

2 eggs                                                   2 teaspoons vanilla
1½ cups sugar                                      ½ cup flour
1 teaspoon cinnamon                           ½ teaspoon nutmeg
¼ teaspoon salt                                     2 cups chopped apples   (any variety of baking apple)
1 cup chopped nuts                               1 teaspoon baking soda

In a large bowl, beat your eggs and vanilla.
Add your sugar, flour, baking soda, nutmeg, salt, and mix well.

Take your nuts (any variety), and put into a zip lock bag.
With your rolling pin crush your nuts
. Add your nuts to your mixture and mix well.
Peel and core your apples.
Start cutting your apples into little wedges.
I used Macintosh apples. Add your apples to the mixture and stir well.
Pour into a 9 inch round or square tin.
Bake for 25 to 30 minutes at 350 degrees. When crust starts turning golden brown and a toothpick comes out clean, your Apple wedge dessert is done.

This dessert is great right out of the oven with ice cream or cool whip on top. Enjoy a sweet apple treat anytime.
I hope you enjoy my grandmother's recipe for French Apple Wedges from Suzie Homemaker.

Mock Apple Pie

How many people, like apple pie? Well, today I am going to give you my family’s secret recipe for a mock apple pie. This was always the joke in our family because no one knew it wasn’t a real apple pie. This pie even looks and tastes like a real apple pie. So today I am going to talk to you about using pears to make a mock apple pie. You can get fresh pears years round from the grocery store and they are relatively cheap. Since I have a pear tree in my back yard I just pick them and freeze some sliced pears to be used whenever I want a pear pie. Some pears we eat right away in fall, the rest I can and make pear sauce.

Pastry Shell

1 Cup Flour                                       2 Tablespoons ice water
½ Teaspoon salt                                 1 Teaspoon vinegar
   1 stick of margarine

Mix flour, salt and margarine until it resembles coarse meal. Mix water and vinegar. Form dough into a  ball. Cover. Chill for 15 minutes, then roll out dough to fit a 9-inch pie plate and shape edge. Bake at 400 degrees for 15 minutes. Makes 1 pie shell.

Pear Pie

Pastry for 2 crust pie                            ½ Teaspoon salt
5 Cups of pears sliced                           1 Teaspoon cinnamon
½ Cup sugar                                          1 Teaspoon lemon juice
¼ Cup flour                                           1 Tablespoon butter or margarine

Preheat oven to 350 degrees. Peel and slice pears. Put ½ of pears in pastry lined 9-inch pie pan. Mix sugar, salt, and cinnamon.
Sprinkle half of mixture over pears. Put in the rest of the pears and cover with the rest of the sugar mixture.
Sprinkle with lemon juice. Dot top with margarine or butter. Cover with top crust or optional French Apple topping.  Bake for 50 minutes.

Recipe option: This is what I do instead of a top crust, and my whole family loves it. For topping as for French Apple Pie: Mix ½ cup butter or margarine, ½ cup brown sugar and 1 cup flour. Sprinkle the  French Apple Pie mixture  over top instead of the crust. Bake for 50 minutes. Enjoy warm or cold with cool whip or ice cream.
