Thanksgiving Leftover Recipes

I hope everybody had a very happy Thanksgiving Day! I ended up serving 15 people for lunch. Now I have a bunch of leftovers to deal with. Some of them I will freeze in meal size containers and some I just make different dishes with them. If you are like most people who serve Thanksgiving dinner you will have a lot of leftovers. Today I want to give you some ideas and recipes for some of those leftovers.

The first leftover most people have a little left of is Sweet potatoes. If you make plane sweet potatoes this recipe is really good.

Sweet Potato Casserole

3 cups mashed sweet potatoes                                        1 cup sugar
                ½ teaspoon salt                                                                2 eggs
½ stick melted butter                                                        ½ cup milk
                1 teaspoon vanilla

Topping

1 cup brown sugar                                                             1 cup chopped walnuts (or any other nuts
1/3 stick butter                                                                   1/3 cup flour

Mix together sweet potatoes, salt, butter, vanilla, sugar, eggs, and milk until well blended. Pour into a greased 13X9 inch baking dish, set aside. In a large bowl combine brown sugar, butter, nuts, and flour until well blended. Sprinkle over top of sweet potato mixture and bake at 350 degrees for 35 minutes.

We had this dish for Thanksgiving dinner for the first time this year and everybody loved it so much that we only had a small dish left. This will be our new sweet potato dish from now on for Thanksgiving dinner.

This next dish I like to make it with my leftover turkey. I really don/t have an actual recipe for this one but I can give you the ingredients I use and you can mix and match it with what you like.

Turkey-Potato Hash

1 to 2 cups ground or chopped up Turkey                        1 to 2 cups mashed potatoes
¼ to ½ chopped onions                                                     1 egg scrambles
¼ to ½ cup turkey gravy                                                    salt and pepper to taste
                1 tablespoon minced garlic

Take all ingredients and mix well in a large bowl. With a big spoon scoop out a big amount of hash and make it into patties. With a little butter or olive oil put it into a frying pan so your patties will not stick. Flatten them out so they are thin patties. Fry them on both sides until golden brown and crispy. This is a great way to use up some of your leftover turkey and potatoes. I make up several patties and place them on waxed paper and freeze them to be used at a later date and time. They keep very well in the freezer in a plastic freezer bag or containers. Now you can have a quick meal anytime.

Thanksgiving comes once a year and is just the beginning of the holiday season. There are so many different things you can make with the Thanksgiving leftover, so I hope you like my two dishes. I hope everybody had a wonderful Thanksgiving from Suzie homemaker.

Crock Pot Potato Soup

How many of you work long hour and have to come home and cook dinner? If you are like most families this is a job that has to be done on a regular basis. What can I make in a hurry, but still be something the whole family will like. My husband would say whatever you make is fine, but my kids will look at the meal and make a face. Finding meals that everybody will like is very difficult, especially if you have kids. When my schedule doesn’t permit me to make a big meal, I will pull out the crock pot and put something together to be cooked over the day while I am at work. Crock pots are a god send when time is tight to get a meal on the table. This time of the year when it is cold is a great time for soups. So today I will give you an easy crock pot soup recipe that is hearty and healthy.

Crock Pot Potato Soup

Chicken Broth 4 cups                                   1 ½ cups chopped onions
5 cups diced russet potatoes                         3 Tablespoons cornstarch
2 cups shredded American or cheddar cheese

Spray your crock pot with non-stick spray.
Take 3 ¾ cups of chicken broth and pour into crock pot. Reserve ¼ cup of broth for later. Put your diced potatoes and chopped onions in with your chicken broth. Cover and cook on low for 8 hours. When you get home, take the remaining ¼ cup of broth and beat in your 3 Tablespoons of cornstarch.
Turn your crop pot up to high and pour in your cornstarch and broth mixture and cook for 10 to 15 minutes until soup starts thickening.
Stir in your 2 cups of cheese.
Now you have a delicious soup that is hearty and healthy.

If you have the time just make this on the stove. Boil your potatoes and onions in the chicken broth for about 1 hour, now add your remaining ¼ cup of chicken broth and mix it with your cornstarch. Add to the soup and boil for about 5 minutes until the juice starts to thicken up. Add your 2 cups of cheese and stir into the soup. Now you have a delicious potato soup in about 2 hours.

This is so easy to throw together before you go to work in the morning. This takes about 15 minutes to cut up the potatoes and onions and put into the crockpot. Now you can have a warm bowl of soup when you get home in less than 20 minutes. I love making soups this time of the year. I love using my crockpot and I will try to share some of my favorite recipes with you in future blog posts. I hope you like my potato soup recipe from Suzie Homemaker.

Yummy Potato Recipe

Today I am going to give you my daughter’s potato recipe. She likes to watch cooking shows and tries to make changes to suit her tastes. She says she is not a good cook, but the whole family disagrees. To be honest she just wants mom to cook instead. So today, I will show you step by step how she makes this recipe. I will be making a smaller version than I normally do just to show you. You can make as many potatoes as you like, depending on your family size. We have a family or four so I will give you the recipe for four.

Ingredients needed:

6 to 8 potatoes                                   Garlic Salt 1 teaspoon
Paprika 1 teaspoon                            Chili Powder ¼ to ½ teaspoon (how spicy you like)
Italian Seasoning 1 teaspoon             Parsley 1 teaspoon
Extra Virgin Olive Oil 3 Tablespoons

First, wash and peel your potatoes.
Put your olive oil in your pan and cut your potatoes into little bite size pieces.
Place your potatoes in your oil and toss them around in the oil to coat them. Next sprinkle all your spices on top of your potatoes.
Toss your potatoes around in the pan to evenly coat them with your spices.
Turn your burner on to a medium setting and start frying your potatoes. You want to have a crispy coating on the outside,
but the inside should still be firm. This should take between 10 and 15 minutes. When your potatoes look nice and crispy put in the oven at 350 degrees for 30 minutes.
These potatoes will come out nice and crispy on the outside and soft on the inside.

This one of our favorite potatoes dishes the whole family can agree on.  We love these potatoes so much we have them a couple times a week.  I hope you enjoy my 21-year-old daughter's potato recipe from Suzie Homemaker.
